Feels like fall, y'all!

Everyone's favorite time of year, right? Cooler weather, gearing up for the holidays, lots of outdoor time... I love fall.

Yesterday was the official "First Pumpkin Cookie Day" at our house. The boys love this day of the year. They knew it was coming and asked over and over if it was time to make the cookies. It is a fun tradition for us.

The name of the recipe is kind of funny... it came from a friend of mine. Her husband is Greg. I giggle every time I see the name on the recipe card. Maybe you will too. 

Here is the recipe for the best fall cookies ever:


Cookies That Greg Hates
1/2 cup shortening
1 1/2 cup white sugar
1 egg
1 cup canned pumpkin (I use the whole can)
1 tsp vanilla extract
2 1/2 cup flour
1 tsp baking powder
1 tsp baking soda
1 tsp salt
1 tsp ground cinnamon
1 tsp ground nutmeg
3/4 cup chopped walnuts (optional, I don't use them) 
2 cups choc chips

Preheat oven to 350. In a large bowl cream together shortening and sugar until fluffy. Beat in eh egg, then stir in canned pumpkin and vanilla. In a separate bowl combine the dry ingredients except for the walnuts and choc chips. Mix well, then stir into the wet mixture. Stir in walnuts and choc chips. Drop by teaspoon on a greased cookie sheet and bake for 15-16 minutes or until light brown. Cool and enjoy.
